Curing
and/or smoking was traditionally used as a method of preserving,
but nowadays it offers new flavours to try & enjoy. In a bid
to drive down costs, manufacturers of such products have cheapened
the product by injecting large amounts of water with preservatives
and flavourings, both natural and artificial. Obviously the choice
out there is somewhat variable when it comes to quality.
We
are selective in our suppliers, choosing those who use only traditional
methods and natural ingredients. We also cure and smoke some specialist
products ourselves, using traditional dry curing methods and/or
by slowly smoking the product over oak or beech, thus re-awakening
memories of how cured & smoked produce used to taste…
